Spanish bull with tons of potential

Here we have one of the other guests of honor from Friday night's luscious dinner. This is actually on Chairman's Selection for $30 right now, whereas it normally sells for $40. In comparison to The Prisoner, this one seems much lighter, with more of an emphasis on red fruits. But Sierra Carche is full-bodied nonetheless, made up of 50 percent monastrell, 25 percent malbec and 25 percent petit verdot.

The difference is that there's a certain tartness to this one -- almost like balsamic vinegar -- that adds another dimension to the fullness. Along with that goes cherry, pomegranate and raspberry notes and plenty of toasted oak. The flavor is still a bit young and could definitely develop over time ... three to four years could do wonders. Overall, this was a perfect companion to the hearty salmon and risotto.
